60% Marsanne, 40% Roussanne
Hand harvested grapes are pressed and fermented in stainless steel vats. 60% of the wine is then aged in neutral Burgundy barrels and 40% of the crop is aged in vat. The wine systematically goes through the malo-lactic fermentation and is bottled during the summer before the following harvest.
Gorgeous mineral notes meld with white fruit blossom aromatics (peach, apricot, acacia) and some citrus and almond notes. The wine has taught acidity but fills out on the palate. Long and persistent, it will marry well with all dishes that call for a complex white wine. |
