Organically grown grapes from the Valle del Salnés zone of Rías Baixas (Galicia).
12 hour skin maceration and fermentation on indigenous yeasts in stainless steel tanks. Aged 5 months on the fine lees and bottled with no fining or filtration. SO2 levels are less than 30mg/L, considered very low for whites from this or any region.
Golden straw color with a nose of ripe fruit, toasty notes of pastry and yeast lead into a wine with fresh forest aromatics, citrus. Quite dry and refreshing. Very poised and classy expression of this grape. |
