In Italian "PIANTE/SPARSE" literally means "spare vines", which perfectly describes the vines used in this unique wine. Nobody knows why the old-times co-planted individual white varietals within the red varietal vineyards, but Ayunta farms, harvests and vinifies the grapes from these vines separately to produce this unique wine. Fermented and aged in stainless steel vat to maintain the unique balance of fresh acidity an intriguing mineral core. |
