This sparkling wine belongs in the category dubbed "Col Fondo" in Italy as its secondary fermentation takes place mostly in tank before being bottled where it finishes leaving both the CO2 bubbles but also a small deposit of sediment which is actually the yeast cells. The wine can be decanted off the sediment or served complete.
Mildly fizzy, you will find floral notes in the nose with apple and stone fruits prevalent along with tropical notes. On the palate, the wine shows fresh acidity with a juicy texture that marries well with salumi and most any other appetizers. |
